I'd say stick with the Koni setup.  The COs will need rebuilding every so often (if not already).

To get super low cars on our machine we have some planks of wood we lay down and it works out pretty well.
2008 DGM WRX, IPR over sized top mount, Forge BPV, Perrin CAI, Invidia DP, Borla CB, Bc Br coilovers, 17x9 Rota DTP's, V-tuned.

+1 and a lot of shops have low profile jacks/lifts that will work

When the MINI was lower, I had problems where ever getting on lifts or alignment machines, had to go the wood plank route IF the place had any laying around. I've only raised it 3/4" since and it's pretty easy now. Super low is not typically best performance-wise anyhoo...
